I got this recipe from another forum I'm on and tried it. It's disgustingly easy to make and the end result tastes like those little cheesy crackers.

1 cup flour
1/8 ts. salt (I just added a couple shakes because I cook lo sodium and the cheese has enough salt.)
sprinkling black pepper (I use course grated. It's less powdery.)
pinch of cayenne (I didn't have it so I put in a few shakes of tabasco.)
1 cup grated sharp cheddar (I used mild because that's what I had. You can use any you like.)
8 Tbsp. butter or margarine (A stick is 8 Tbsp. I just let it sit on the shelf for a couple hours.)

Soften butter. Shred cheese with a grater or use food processor grater. Add butter and mix throughly. Add dry ingredients and blend until well mixed. If you use a food processor the dough will ball up on its own when it's about done blending. Divide dough into thirds and roll into logs about 1 inch in diameter. Wrap in plastic wrap or wax paper and refrigerate for up to 3 days.
Slice dough into 1/4 inch slices and place on cookie sheet. They do not spread so they can be pretty close together. Bake at 425 degrees F. for about 8-10 minutes or until very lightly browned.

I had my oven rack on the rack below center when I made mine. They are so good! We're having chili this afternoon at my son's so I'm taking them for that. His brother liked them a lot, too.

I might make them more Ritz cracker size next time and put some cream cheese in the middle or peanutbutter.

If you bake them on foil you won't even have to wash the cookie sheet! Smiley

I made these yesterday only I used Swiss cheese and about 1/4 tsp. of ground mustard. I baked them the same day instead of aging them. Good stuff! I put them in the freezer for about 5 minutes before I cut them because the dough is so soft. I baked them right after that. Total time to make and bake was less than 30 minutes.
