My wife and I experimented today with some different recipes.  The one we tried went something like this.

Package of white portabello's
Clean them off then let them soak for at least an hour in some salt water.  Then cut them in quarters.  You can use everything even the stems.  then set 'em to the side.


1/2 cup flour
1/2 cup bread crumbs
2 tbspoon garlic salt (this is depending on how salty you want them... you can always salt them after you get done so 2 tablespoons is a good starting place, then just salt them after your done if you need more)
1 tbspoon italian seasoning

mix it all together in one bowl then in a separate bowl put some beaten eggs.  It's easier to do if you put the bowls side by side like an assembly line.

I like to use peanut oil when I fry just because it's cleaner.  Make sure you have enough to saturate the mushroom pieces.  Heat the oil up to about 340.  Once it's heated roll a handful of mushroom pieces in your beaten eggs.  Get em all good and covered, the roll them in your flour/breadcrumb mix and throw them in the oil until golden brown.

My wife likes to eat them with ketchup but I have always eaten them with ranch.  I have heard dipping them in sour cream is good too.  You can fry pickles like this too but I wouldnt use breadcrumbs... just a whole cup of flour.

I have had mushrooms that were stuffed with cheese and they were awesome but that sounds hard.  It would be easier to just throw some shredded cheese on top of them.

Sounds good, Engel. We used to make stuffed shrooms with bread crumbs, butter, Italian seasoning, egg, and garlic. We just baked them on a cookie sheet.

The recipe sounds pretty good and tempting though.

The recipe sounds pretty good and tempting though.

I don't think the words deep fry and healthy can be used in the same recipe.  I guess a healthy version would be to bake them.

Yeah, I think if you just bake them in a hot oven --over 425 degrees F. --they'd probably crisp okay. Or if the oven has a broil feature use that for a few after they're baked. Just watch them carefully so they don't turn into cinders.
